Ingredients
Spinach and mixed greens
Salami, Iberico chorizo and Iberico salchichon
Parmesan cheese
Cherry tomatoes
Red onions
Garlic
Olive oil
Salt and pepper
Balsamic Vinegar
Lemon
Preparation
Toss tomatoes, red onions and garlic with olive oil salt and pepper. In an air fryer - Roast at 400 degrees for 11 minutes.
In a small pot, add 2 inches of water, cover, and bring to a boil over high heat.
Once boiling, add eggs, straight from the refrigerator into the pot.
Replace the lid and let it continue to boil for six minutes.
After six minutes, remove the eggs from the pot and place them in an ice water bath.
In a bowl add your greens, season with olive oil, salt and pepper, lemon juice, and balsamic vinegar.
Top with roasted tomatoes, red onions, garlic, soft boiled egg, and cured meats. Sprinkle with cheese and red pepper flakes. Enjoy!
