Salted Tomatoes and Egg Over Steamed Rice šŸ…šŸ„ššŸš


Ingredients

2 medium tomatoes

4 eggs

2 green onions

2 garlic cloves

1 Tbsp ketchup

1 Tbsp soy sauce

4 Tbsp water

2 Tbsp oil

1/2 Tbsp sugar

Salt and pepper to taste


Preparation

  1. Finely chop green onions, mince garlic, and chop tomatoes into thick cubes and set aside.

  2. In a separate bowl, beat the eggs and fry on a large pan with oil on medium heat. Be sure to scramble the eggs into chunks. Remove the eggs and set aside.

  3. Using the same pan, add green onions and garlic, letting them simmer until the onion is slightly golden brown (about 30 seconds).

  4. Add the tomatoes, soy sauce, ketchup, sugar, water, salt and pepper to the mixture. Continue stirring on medium heat for about 5-10 minutes.

  5. Fold the scrambled eggs into the mixture and continue to stir as it simmers until mixed well.

  6. Have a separate bowl of steamed rice ready.

  7. Once mixed, add over the rice and enjoy! :)
