Bacon Wrapped Jalapeño Poppers

Ingredients

Yield: 30 poppers

1 lb ground chicken

15 slices of bacon cut in half

8oz cream cheese

15 jalapeños sliced in half

1/2 cup Mozarella cheese

1/2 cup Colby jack cheese

Salt and pepper for taste


Preparation

  1. Preheat oven to 400°F.

  2. In a pan, add a small amount of oil and cook ground chicken cook ground chicken until golden. Season with salt and pepper for added flavor.

  3. In a large bowl, combine cream cheese, mozzarella and Colby-Jack cheese. Fold in chicken until mixed evenly, and season generously with salt and pepper.

  4. Halve the jalapeños lengthwise, then use a spoon to remove seeds and veins.

  5. Fill with chicken cream cheese mixture and wrap each with a half slice of bacon. (The bacon will shrink as it cooks, so you want to make sure the top of the popper is wrapped complately.)

  6. Place on a baking sheet and transfer to oven. Bake until bacon is crispy and peppers are tender, about 25 minutes.

  7. Let cool and Enjoy!
